Food Safety in a Blackout

The power has been out for twenty minutes and you are standing in the kitchen with your hand on the refrigerator door. Whatever you were reaching for, let it go, because that door is now the most important piece of food-safety equipment you own. USDA guidance is that an unopened refrigerator keeps food at a safe temperature for about four hours, and every casual opening spends part of that window. Blackout food safety is not complicated, but it is unforgiving of guesswork. It runs on a clock, the clock has three settings, and the first rule takes effect the moment the lights go out: close the doors and keep them closed.

Hour zero to four: the refrigerator holds, if you let it

For roughly the first four hours, an unopened refrigerator is doing its job with no help from you. The cold mass of the food inside is the battery; the sealed door is the insulation. This is the window in which nothing needs to be decided. Eat from the pantry, not the fridge. If you know the outage will be long, this is also the moment to plan rather than rummage: decide what you will pull out later, in one organized opening, instead of five exploratory ones. Most outages end inside this window, and a household that simply left the doors shut loses nothing at all.

Hour four: the perishables line

At the four-hour mark, USDA guidance draws a hard line: perishables that have sat above safe temperature - meat, poultry, fish, eggs, leftovers, anything of that character - should be discarded. This is the rule people most want to negotiate with, and the reason it exists is that the bacteria that cause foodborne illness do not announce themselves. Food can look normal, smell normal, and still make you sick, which is why the companion rule is absolute: never taste food to determine whether it is safe. A blackout is the worst possible time for a household case of food poisoning, since the same outage may be complicating transport, water, and medical care.

Hour 24: the half-full freezer reaches its limit

The freezer runs on a longer clock, and how long depends almost entirely on how full it is. A half-full freezer holds a safe temperature for about 24 hours with the door closed. The physics is the same as the fridge but stronger: frozen food is a block of thermal mass, and the more of it there is, the more cold there is to spend. Air, by contrast, warms quickly, so a mostly empty freezer is mostly air and fails fast. This is why a practical habit for outage-prone areas is to keep the freezer full even if some of that volume is just containers of frozen water, which also become safe drinking water as they thaw.

Hour 48: the full freezer's outer wall

A full freezer, door closed, holds safe temperature for about 48 hours. That is the outer wall of the passive clock: two full days in which a well-stocked freezer protects itself. Past it, you are into active measures - ice, coolers, or generator power. If a generator is part of your plan, note that a refrigerator is a motor load with a large starting surge, so size the unit with the generator sizing calculator rather than by running watts alone. And a freezer you never open is worth more than a generator you start six hours too late.

Keep or discard: reasoning instead of guessing

When power returns, sort by category and by clock, not by appearance. Perishables from the refrigerator that spent more than four hours above safe temperature go, full stop. Items that tolerate room temperature anyway - unopened condiments, hard cheeses, most produce, bread, butter within reason - are generally fine. For the freezer, the question is temperature, not time: if the outage stayed inside the 24- or 48-hour window for your freezer's fill level and the door stayed shut, the contents likely never left the safe zone. If you are unsure about any single item, USDA's own phrasing settles it: when in doubt, throw it out. Food is replaceable.

The refreeze test

The freezer offers one genuinely forgiving rule. Food may be safely refrozen if it still contains ice crystals or has stayed at or below 40 degrees Fahrenheit. Ice crystals are the visible proof that the item never fully thawed; a thermometer reading of 40 F or below is the same proof by instrument. Refrozen food may suffer in quality - texture and moisture take the hit - but it remains safe, which means a long outage does not automatically cost you the whole freezer. A cheap appliance thermometer, placed in the freezer before any outage, converts this from a judgment call into a reading.

Stocking with the clock in mind

Once you know the clock, you can stock against it.
